Orange wine is not a fad. It is a centuries old wine that we are only now being reintroduced to. Viognier is a great grape choice when making an orange wine. I was given a lucky opportunity to source 1 x ton of Viognier from the 1994 planting at Deux Vert Vineyard in Yamhill, Oregon. Deux Vert is the location of the first Viognier and Syrah plantings in the Willamette Valley. So, what to do with just a single ton of fruit? Well, I was initially going to just give it a cold soak for a few days, but it just kept tasting better and fermentation hadn’t quite kicked off yet. The fermentation bins were left outside (much colder than in the cellar), perfect soaking conditions for the grapes……so, I turned it up to 12! After 12 days it was pressed off into once used Acacia puncheons.
